ASSEMBLY
- Make the special sauce by combining all of the ingredients in a small bowl. Mix well and chill until ready to serve.
- Add the mushrooms, onions, and EVOO to a medium sized frying pan. Sauté over medium heat until the onions are translucent.
- Add the coconut aminos to the mushroom and onions. Sauté until the coconut aminos caramelize. Turn off the burner and set aside while you prep the burger patties.
- Form the ground beef into 4 balls, and smash each ball onto a tortilla. Smash until it covers the entire tortilla.
- Sprinkle each patty with salt and pepper.
- Heat a large frying pan on medium high heat. You might need two pans in order to pan fry all 4 patties at the same time.
- Place the burgers on the pan with the beef side down. Cook for 5 minutes.
- Flip the burgers. Using a spatula, carefully cut the burger in half (this is so you’ll be able to close the tortilla easily). Make sure to not slice the tortilla, only the burger.
- Top the burgers with the mushrooms, onions, and then the cheese.
- Cook for another minute or two, and close the quesadilla as best as you can. It might not close all the way and that’s just fine, it will harden and form as it cools.
- Serve with the burger toppings, and ENJOY!
