INGREDIENTS
4 Pasture Raised Eggs
1 ¼ Cup Full-Fat Coconut Milk
2 Teaspoons Vanilla
1 Teaspoon Baking Powder
½ Cup Coconut Flour
4 Tablespoons Monk Fruit Sweetener
½ Cup Frozen Wild Blueberries
Coconut Oil for Frying
ASSEMBLY
- In a medium sized mixing bowl combine eggs, coconut milk, vanilla, baking powder, coconut flour and monk fruit.
- Mix ingredients on low with an electric mixer until there are no lumps.
- With a spatula add the blueberries to the batter and mix in by hand.
- Heat a frying pan on medium low heat and melt ½ teaspoon of coconut oil.
- Place 1/3 cup of batter into the pan and heat until all edges of the pancake are golden brown and allows you to flip.
- Serve with Lettuce Heal’s Creamy Blueberry Sauce, fresh fruit or almond butter.
