DONUT INGREDIENTS
1 Cup Almond Flour
1/3 Cup Monk Fruit Sweetener
2 Teaspoons Baking Powder
2 Teaspoons Cinnamon
¼ Teaspoon Himalayan Salt
¼ Cup Coconut Oil (Measure, then Melt)
¼ Cup Full-Fat Coconut Milk
2 Pasture-Raised Eggs
1 Teaspoon Vanilla Extract
DONUT TOPPING INGREDIENTS
¼ Cup Monk Fruit Sweetener
1 Teaspoon Cinnamon
2 Tablespoons Coconut Oil (Measure, then Melt)
ASSEMBLY
- In a large mixing bowl combine almond flour, monk fruit sweetener, baking powder, cinnamon and salt.
- In a separate large mixing bowl with an electric mixer on medium-low combine coconut oil, coconut milk, eggs and vanilla extract.
- Slowly combine your dry ingredients into your egg mixture with an electric mixer on medium-low.
- Spoon your mixture into a large plastic baggie. Press out the air, seal the baggie and snip the bottom corner of the bag with a scissors to make a donut piping bag.
- Using your piping bag, fill a donut pan ¾ of the way with your donut mixture.
- Drop the pan on the counter a couple times to flatten out your mixture.
- Bake at 350°Fairenheit for 26 – 28 minutes.
- While the donuts are baking make your topping.
- In a small bowl combine monk fruit and cinnamon.
- When the donuts are done baking and are cool enough to handle, remove them from the donut pan and place them on a cooling rack.
- The best way I have found to remove the donuts is with a small rubber spatula and gently remove.
- Lightly brush one donut at a time with coconut oil and press into the topping to coat evenly.
