Jalapeno Cheddar Flatbread with Bacon Scallion Dip

 

 

FLATBREAD INGREDIENTS

2 Cups Almond Flour

1 Tablespoon Baking Powder

1 Teaspoon Garlic Powder

2 Pasture-Raised Eggs

2 ½ oz Full-Fat Cream Cheese

3 Tablespoons Heavy Whipping Cream

3 Cups Shredded Cheddar

1 Teaspoon Himalayan Salt

1 Tablespoon Butter Melted

1 Fresh Jalapeno, Pitted.  One half diced, and the other half thinly sliced.

BACON SCALLION CHEESE DIP INGREDIENTS

8oz Full-Fat Plain Cream Cheese Softened

4 Sliced of Bacon Cooked and Finely Diced

2 Tablespoons Scallions Finely Diced

FLATBREAD ASSEMBLY

  1. In a large mixing bowl combine almond flour, baking powder, and garlic powder. Mix well.
  2. In a medium sized sauce pan on low heat add heavy whipping cream and cream cheese. Whisk until cream cheese is melted, add cheddar and mix well with a spatula.
  3. With an electric mixer combine the eggs, the cheese mixture, and the diced jalapenos.
  4. Once the cheese, jalapenos, and eggs are fully mixed, slowly add the dry ingredients and mix well.
  5. If making two small flatbreads, divide into 2 portions. Otherwise, keep as one.
  6. Place dough on a large non-stick lined cookie sheet and form a ¼ inch thick flatbread formed into the shape of a rectangle.
  7. Brush the top of the flatbread(s) with the melted butter.
  8. Lightly press all over the flatbread(s) with your finger to form small indents. Cover with sliced jalapeno by lightly pressing each slice into the dough.
  9. Bake at 425°F for 20 – 22 minutes rotating the cookie sheet often.
  10. Let cool on a wired rack.

BACON SCALLION CHEESE DIP ASSEMBLY

  1. In a medium sized mixing bowl combine cream cheese, bacon, and scallions. Mix well.
  2. Serve with the flatbread.

MAKES 2 SMALL FLATBREADS or 1 LARGE

Almond Flour:  An excellent gluten free option that is low in carbohydrates and high in fiber and protein.

Himalayan Salt:  One of the cleanest salts you can find. As opposed to conventional table salt that is heavily processed which removes its beneficial minerals.

Pasture-Raised Eggs:  They boost cognitive function and help neural processing within the brain.  Twice as many omega 3 fatty acids and three times more vitamin E than caged chicken eggs.

Heavy Whipping Cream, Cream Cheese and Cheddar:  The high fat and low sugar content makes these ingredients an EXCELLENT Ketogenic choice.

Bacon:  A source of choline, which is important for liver function, brain development, nerve function and muscle movement.
