GRILLED CHICKEN WALDORF SALAD

CHICKEN INGREDIENTS

3 Chicken Breasts

½ Cup Avocado Oil

1 Tablespoon Lemon Juice

2 Teaspoons Garam Masala

1 Teaspoon Pink Himalayan Salt

1 Tablespoon Coconut Aminos

2 Teaspoons Coconut Sugar

SALAD INGREDIENTS

1 Honeycrisp Apple, Cut into Chunks

½ Cup Celery Diced

½ Cup Walnuts

½ Cup Greek Yogurt

3 Tablespoons Vanilla Protein Powder

4 Teaspoons Lemon Juice

2 Teaspoons Coconut Sugar

2 Teaspoons Honey

½ Teaspoon Cinnamon

INSTRUCTIONS

  1. Make this chicken marinade by combining all ingredients in a small bowl. 
  2. Marinate the chicken for 8 – 24 hours.
  3. Heat the grill to 450F.
  4. Grill the chicken for 4 minutes.
  5. Flip the chicken and grill for an additional 4 minutes.
  6. Let the chicken cool, and then cut into small bite-size pieces. 
  7. In a small bowl add the yogurt, vanilla protein powder, lemon juice, coconut sugar, honey, and cinnamon.  Mix well until fully combined and smooth. 
  8. In a large bowl add the remaining ingredients, along with the chicken.  Mix well.
  9. Add the dressing to the chicken salad, and mix well until fully coated.
  10. Chill and serve with your favorite bread, pitas, or tortillas.
  11. ENJOY!
