Garden Veggie and Hamburger Soup

INGREDIENTS
1 LB Ground Beef Browned and Crumbled (Eliminate for Vegan Option)
1 Zucchini Chopped
3 Celery Stalks Diced
28oz Crushed Tomatoes
2 Tablespoons Tomato Paste
1/2 Cup Onions Diced
1/2 Tablespoon Italian Seasoning
32oz Beef Broth or Vegetable for Vegan Option
1 Tablespoon Minced Garlic
1 Cup Orange Bell Peppers Diced
1/2 Cup Green Bell or Poblano Pepper Diced
1/2 Teaspoon Salt
1/2 Teaspoon Thyme

ASSEMBLY

  1. Add all ingredients to a slow cooker.
  2. Cook on low for 8 hours.
  3. Taste and adjust spices if necessary.
