Chicken with Cilantro Pesto


CHICKEN INGREDIENTS
2-3 Chicken Breasts
1/4 Cup Coconut Aminos
2 Tablespoons Lime Juice
1 Tablespoon Minced Garlic
1 Teaspoon Chili Powder
1/2 Teaspoon Paprika
1/2 Teaspoon Salt

PESTO INGREDIENTS
2 Tablespoons Red Onion Diced
3 Large Handfuls of Cilantro
1 Teaspoon Minced Garlic
1/4 Teaspoon Salt
1/4 Cup AVO
3 Tablespoons Toasted Pine Nuts
1/2 Teaspoon Lime Juice

CHICKEN ASSEMBLY

  1. In a small bowl combine all marinade ingredients. Mix well.
  2. Marinate chicken for at least and hour or two.
  3. In an air fryer, cook at 400 for 11 minutes.

    PESTO ASSEMBLY
  4. In a food processor combine all ingredients except the AVO.
  5. Pulse and slowly add AVO.
  6. Refrigerate until ready to serve.
