Dairy Free Ground Beef Enchiladas

INGREDIENTS
1 LB Ground Beef
1 Tablespoon Chili Powder
1/2 Teaspoon Paprika
1 Teaspoon Salt
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Onion Powder
1/2 Teaspoon Coriander
1.5 Teaspoon Cumin
1/4 Teaspoon Chipotle Powder
7oz Diced Chiles
1/2 Cup Diced Onion
15oz Jar of Enchilada Sauce, I used @sietefoods
10-12 Tortillas, I used @sietefoods Almond Tortillas

ASSEMBLY

1. In a large skillet add ground beef, brown and crumble over medium high heat.
2. Add taco seasoning, peppers, onions, 1/2 cup enchilada sauce, and water (optional) until desired texture is reached.
3. In a large baking dish add 1/2 cup of enchilada sauce.
4. Fill each tortilla with ground beef mixture and place in the baking dish.
5. Top with remaining enchilada sauce.
6. Bake at 350 for 30 minutes.
7. Serve with favorite enchilada toppings.
