Short Rib Tacos with Avocado and Cilantro Crème!
SHORT RIB INGREDIENTS
4LBS Short Ribs
Salt and Pepper
2 Cups Beef Bone Broth
1 Cup Coconut Aminos
1 Teaspoon Garlic Powder
1/2 Teaspoon Thyme
1/2 Teaspoon Rosemary
1/2 Teaspoon Onion Powder
3 Stalks of Celery Sliced
1/2 Onion Cut into Large Pieces
AVOCADO and CILANTRO CRÈME
INGREDIENTS
1/2 Cup Sour Cream
1/2 Avocado
Handful of Cilantro
1 Teaspoon Himalayan Pink Salt
1 Teaspoon Lime Juice, more to taste
TACO INGREDIENTS
Tortillas
Shredded Short Ribs
Cilantro Avocado Crème
Pineapple Diced
Red Onion Diced
Green Leaf Lettuce Shredded
SHORT RIB ASSEMBLY
1. In a large frying pan, add ribs.
Sear all sides, and generously season with salt and pepper.
2. In a medium sized mixing bowl add all ingredients except the vegetables. Mix well.
3. Add half of the veggies to the bottom of the slow cooker. Add the ribs, top with veggies, and pour liquid on top.
4. Cook on low for 8hours.
5. Shred for Tacos.
AVOCADO and CILANTRO CRÈME ASSEMBLY
1. Toss everything in a food processor.
2. Process until smooth. Add more lime juice if necessary
