AU JUS INGREDIENTS
2 Cups Beef Bone Broth
¼ Cup Coconut Aminos
¼ Teaspoon Pink Himalayan Salt
¼ Teaspoon Garlic Powder
VEGGIE INGREDIENTS
8oz Pack of Button Mushrooms Sliced
½ Onion Sliced
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Coconut Aminos
CHOPPED BEEF INGREDIENTS
1LB Ground Beef
¼ Teaspoon Onion Powder
¼ Teaspoon Pink Himalayan Salt
½ Teaspoon Garlic Powder
3 Tablespoons Coconut Aminos
8 Slices of Sourdough Bread
8 Sliced of Swiss or Provolone Cheese
4 Tablespoons of Butter, Room Temp
JOJO INGREDIENTS
2 Russets Sliced in Half, then Sliced into Quartered Sliced
2 Tablespoons Avocado Oil
2 Teaspoons Meat and Potato Seasoning by Primal Palate
½ Teaspoon Pink Himalayan Salt
ASSEMBLY
- Start by sautéing the veggies. Place the mushrooms, onion, and oil into a medium sized sauté pan. Don’t add the coconut aminos yet.
- Sauté over medium heat while you’re prepping everything else. These can just sauté the whole time.
- The onions need to become translucent, and both veggies should shrink to half their size.
- Make the au just by adding all of the ingredients to a small sauce pan and heat over low. Stirring occasionally.
- Prep the JoJo’s by adding the oil and seasonings to a small bowl, and mix well until fully incorporated.
- In a medium sized bowl add the russets and pour the oil mixture over the potatoes and ensure they are evenly coated.
- Add the russets to the air-fryer on the French fry setting which is 400 for about 18-20 minutes. Occasionally shaking the basket.
- Add the 2 Tablespoons of coconut aminos to your mushroom and onions. Mix and continue to sauté while it caramelizes.
- While the veggies and JoJo’s are cooking, start the beef.
- Add the beef to a medium sized fry or sauté pan and start browning over medium low heat.
- While the beef is browning add all of the seasonings and coconut aminos to a small bowl and mix until fully incorporated. Set aside.
- Remove the mushroom and onions from the heat.
- Butter one side of the sliced sourdough and set on a large frying pan. You might have to work in batches or use more than one pan.
- Add a slice of cheese to 4 of the slices, then the mushrooms and onions.
- Remove the beef from the heat, and carefully place the crumbled beef on top of the 4 slices of bread with the veggies and cheese.
- Place the remaining slices of cheese on top of the beef and veggies. This will help hold it all together when dipping in the au jus.
- Lightly cover the bread pan with foil and pan fry on medium until the bread is golden brown and the cheese has melted.
- Check to see if the JoJo’s need anymore time. They should be golden brown and crispy.
- Plate the slices of bread with the beef mixture. Top with the other slice.
- Serve with a small bowl of au jus and a side of JoJo’s.
