INGREDIENTS
3 Cups Frozen Wild Blueberries
1 Tablespoon Coconut Oil
2 Tablespoons Monk Fruit Sweetener
½ Cup Full-Fat Coconut Milk
ASSEMBLY
- In a medium sized sauce pan on medium low heat add blueberries, coconut oil and monk fruit.
- Mix well and cook until the blueberries break and juices begin to release.
- Pour mixture into a high speed blender and blend into a smooth sauce.
- Transfer back to sauce pan and whisk in coconut milk.
- Simmer on low for 5 minutes.
This is an excellent sauce for fruit, pancakes or waffles.
