SOURDOUGH CINNAMON ROLLS

DOUGH INGREDIENTS

2/3 Cup Heavy Whipping Cream

2 Tablespoons Salted Butter, Melted

1 Large Egg

2 Tablespoons Coconut Sugar

1 Teaspoon Himalayan Pink Salt

½ Cup Sourdough Starter, Fed, Active, and Bubbly

2 ½ Cups All Purpose Flour

FILLING INGREDIENTS

2 Tablespoons Salted Butter, Melted

½ Cup Coconut Sugar

3 Teaspoons Cinnamon

¼ Teaspoon Himalayan Pink Salt

½ Teaspoon Vanilla Bean Powder

TOPPING INGREDIENTS

2 Tablespoons Salted Butter, Softened at Room Temp

4oz Full-Fat Plain Cream Cheese

¼ Cup Monk Fruit Powdered Sugar

1 Tablespoon Heavy Whipping Cream

¼ Teaspoon Vanilla Bean Powder

ASSEMBLY

  1. In a stand mixing bowl add the cream, butter, egg, starter, coconut sugar, and salt. 
  2. Mix until fully combined using a spatula.
  3. Add the flour and mix until fully combined. 
  4. Place a wet towel over the mixing bowl and let it sit for 30 minutes.
  5. Knead the dough with a dough hook on medium speed for 5 minutes. 
  6. Shape the dough in a ball and cover the mixing bowl with plastic wrap. 
  7. Let the dough sit out on the counter overnight. 
  8. In the morning press the dough out with your hands on the counter in the shape of a 16 x 11 rectangle. 
  9. Make the filling by adding all of the ingredients to a medium sized bowl.
  10. Mix the filling until fully combined and evenly sprinkle on the rectangle shaped dough. 
  11. Carefully roll the dough into a log. 
  12. Evenly cut the dough into 8 rolls.
  13. Heavily grease a glass pie dish with avocado oil. 
  14. Place the 8 rolls evenly in the dish so both of the cinnamon sides are exposed on the bottom and the top. 
  15. Place the dish in the oven with the door closed and turned off. 
  16. Allow for the dough to rise and double in size.  This should take about 2 hours.
  17. Remove the dish from the oven and preheat to 350F.
  18. Bake the rolls for 35 – 40 minutes until golden brown. 
  19. While the rolls are baking, make the topping. 
  20. Add all of the ingredients to the stand mixer bowl and mix on low until fully combined. 
  21. When the rolls are done baking add the topping.  Evenly spread on each roll with a spatula or a butter knife.
  22. ENJOY!
