BACON AND MUSHROOM EGG BAKE

 

INGREDIENTS

2 Tablespoons Butter

8oz Sliced Mushrooms

½ Cup Diced Yellow Onion

8 Slices Cooked Chopped Bacon (Gluten Free, Uncured)

8 Pasture Free Range Eggs

½ Cup Heavy Whipping Cream

2 Cups Shredded Cheddar

Salt and Pepper

ASSEMBLY

  1. Preheat Oven to 375° Fahrenheit
  2. In a medium sized frying pan melt butter on medium low heat and add the mushrooms and onions. Pan fry until onions are translucent, remove from heat and let stand.
  3. In a large mixing bowl add bacon, eggs, cream, 1 cup of cheese, salt, pepper, mushroom and onions. Whisk everything together until mixed well.
  4. Add the egg mixture to a medium sized glass baking dish.
  5. Bake egg mixture for 20 minutes, and top with the remaining cheese.
  6. Continue to bake for an additional 15 minutes while the cheese melts.

Serves 8
