Southwestern Egg Bake

 

 

INGREDIENTS

2 Tablespoons Grass-fed Butter

2 Cups Mushrooms Sliced

½ Cup Yellow Onion Diced

½ Cup Green Pepper Diced

½ Cup Ham Diced (Gluten Free, Uncured)

8 Free Range Eggs

½ Cup Heavy Whipping Cream

2 Cups Shredded Cheddar

Salt and Pepper

ASSEMBLY

  1. Preheat Oven to 375° Fahrenheit
  2. In a medium sized frying pan melt butter on medium low heat and add the mushrooms. Pan fry 5 minutes.
  3. In a large mixing bowl whisk together the eggs, then combine mushrooms, onion, green pepper, ham, cream and 1 cup of cheese.
  4. Add the egg mixture to a medium sized glass baking dish.
  5. Bake egg mixture for 20 minutes, and top with the remaining cheese.
  6. Continue to bake for an additional 15 minutes while the cheese melts.

Serves 8
