INGREDIENTS
3/4 Cup Cassava Flour
3/4 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1 Teaspoon Himalayan Pink Salt
4 Tablespoon Salted Butter, Melted
1/3 Cup “Mud Season” Cacao & Coffee Nut Butter by Mixed Up
1 Cup Coconut Sugar
1 Large Egg
1 Teaspoon Vanilla Bean Powder
1 Cup Date Chocolate Chips
1/2 Cup Walnuts, Chopped
ASSEMBLY
1. Preheat the oven to 350.
2. Add the melted butter, nut butter, egg, and coconut sugar to a stand mixer. Mix on medium speed until fully combined.
3. Add the remaining ingredients to the stand mixer, with the exception of the chocolate chips and the walnuts. Mix until fully combined.
4. Fold in the chocolate chips and the walnuts until fully combined.
5. Divide into 12 equal parts and roll into balls. Place on a large cookie sheet lined with parchment paper.
6. Bake for 15 – 16 minutes.
7. Let the cookies cool on the cookie sheet for a few minutes. Then transfer to a cooling rack.
