INGREDIENTS
1 LB Ground Beef
1/2 Large Onion Diced
24oz Marinara
15oz Tomato Sauce
12oz Brown Rice Capellini or Spaghetti (About a box and a half of Jovial brand)
1 Teaspoon Pink Himalayan Salt
1 Teaspoon Garlic Powder
1/2 Tablespoon Italian Seasoning
16oz Cottage Cheese
4oz Grated Parmesan
1 Cup Shredded Mozzarella
EVOO to Drizzle
ASSEMBLY
1. In a large frying pan brown the beef over medium heat.
2. Add the diced onion to the beef and continue cooking.
3. Make the pasta in a large pot according to the package directions while the beef is cooking.
4. Add the seasonings to the beef, and mix until fully combined.
5. Add the sauce to the beef and let the mixture simmer on low for about 20 minutes. Stirring occasionally.
6. Drain the pasta and rinse with cool water.
7. Add the pasta back into the large pot, and drizzle with olive oil to prevent the noodles from sticking.
8. Add the cottage cheese to the sauce, and mix well.
9. Add 3/4 of the sauce mixture to the noodles, then mix in half of the parmesan. Mix until evenly coated.
10. Add the noodles to a large baking dish.
11. Carefully pour the remaining sauce on top of the noodles.
12. Then top with the remaining parmesan and mozzarella.
13. Place the baking dish on top of a cooking sheet lined with aluminum foil. This is just incase the sauce drizzles over the side.
14. Bake at 375 covered with foil for 30 minutes. Then bake uncovered for the remining 30.
15. This makes excellent leftovers! Just pour some marinara sauce on the top and bake until warm.
